Vanilla Almond Milk Crepes (Recipe)

Vanilla Almond Milk Crepes

Ingredients
1 Cup Flour
1 Tablespoon White Sugar
1/4 Teaspoon Salt
1 Teaspoon Vanilla Extract
3 Eggs
2 Cups Unsweetened Almond Milk
2 Tablespoons Butter, Melted

Directions
1. Sift together flour, sugar and salt; set aside. In a large bowl, beat eggs, vanilla extract, and almond milk together with an electric mixer. Beat in flour mixture until smooth; stir in melted butter.

2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 2 tablespoons for each crepe. Tip and rotate pan to spread batter as thinly as possible. Brown on both s

Blueberry Johnny Cake
1½ cups of enriched corn meal
½ cup of sifted enriched flour
3 teaspoons of baking powder
½ cup of sugar
½ teaspoon of salt
¼ teaspoon of nutmeg
1 egg
1 cup of milk
½ cup of shortening, soft
1½ cups of blueberries fresh, canned or frozen (drained)
¼ cup of flour
Sift together dry ingredients into bowl. Add egg, milk and shortening. Beat with rotary egg beater until smooth, about one minute. Do not overbeat. Fold in blueberries dredged in ¼ cup of flour, being careful not to crush berries.
